Our Secret to Crafting the Perfect Whisky

You might wonder how we can change a recipe that always starts with 100% malted barley…

 

Well, the secret lies in the details.

While barley is the key ingredient in all our whiskies, we select specific varieties to influence the final flavour. Each batch starts with one of our chosen barley varieties; Laureate, Plumage Archer, or Maris Otter. These varieties are carefully chosen to impart distinctive flavours that form the foundation of our whisky. This is how we lay down the flavour profile even before the spirit reaches the cask.

 

Changing the type of barley is just the start. We also adapt our mash bill; the mix of fermentable sugars that will influence the flavour and texture of the spirit. The mash bill plays a crucial role in the development of flavours, allowing us to manipulate the character of the whisky as it matures.

 

Then there’s the yeast, an often-overlooked aspect of whisky crafting.

Yeast strains have a major impact on flavour development. Each strain brings out unique aromas, esters, and complexities in the spirit. By carefully selecting and manipulating the yeast, we can adapt the brewing techniques to suit the final cask - drawing out the best possible flavour notes for maturation.

 

Whether it's a sherry cask, bourbon barrel, or a more experimental wood type, we aim to craft a new make spirit that pairs perfectly with its cask.
